Individual Sparkling Strawberry Trifles

These Individual Sparkling Strawberry Trifles are the perfect summer treat. The strawberry jello is infused with Champagne to make this dessert extra special. If you don’t have any bubbly to hand, or you want to make this recipe child-friendly, simply substitute the alcohol for lemonade. You’ll get the same fizzy effect with a slightly sweeter taste.


This recipe is great to make when you have some left-over sponge cake. I had to look it up, but apparently ‘left-over cake’ does occur sometimes, just never in our house. If you are unfamiliar with this term like I was, it refers to cake that has not been eaten and will not be eaten. I know – it’s tough to get your head around this concept, but it is real in some homes, apparently!


 If you have eaten all of your left-over cake and don’t fancy the fuss of baking a whole cake just to fill the bottom of a glass, how about making a simple mug cake? Mug cakes are the perfect size to slice and fill the bottom of individual glasses and there are hundreds of recipes for them online.


You can use any flavoured Jello and whichever fruit you enjoy to make these individual trifles – have fun and experiment!

Individual Sparkling Strawberry Trifles
Ingredients
Strawberry Jello
Champagne/Cava/Lemonade
Strawberries
Custard
Whipped cream
Your favourite plain sponge cake

Recipe
1. Slice a small amount of sponge cake and stuff it into the bottom of the trifle glasses.

2. Read the instructions for making your Jello. Instead of using the amount of water on the packet, use 1/3 water and 2/3 Champagne/Cava/Lemonade. Stir together well and pour into the trifle glasses until the Jello mix covers the sponge. Place the rest of the Jello in the fridge to set.

3. Slice some strawberries and place on top of the Jello-soaking sponge. Pour on a layer of custard – homemade or store-bought – and leave in the fridge to set.

4. Remove the Jello from the fridge before it has fully set – it shouldn’t be runny, but it shouldn’t be fully set either. Scoop the Jello out and top the rest of the trifle glasses. Slice some more strawberries and lay them on top of the Jello. The trifles will need to go back into the fridge for at least 4 hours to fully set.

5. Top with whipped cream and sprinkles before serving.

    The only "problem" is that you probably have to make at least 2 for each. It looks too delicious to stop after just one serving :)
